bliss balls yummo!


These may look like chocolate truffles but they're really quite a different thing alltogether.  Mostly nuts and fruit with just a little sweetener and cocoa.

1/2 - 1 Cup cashews
2 Tablespoons honey
1 teaspoon vanilla extract
6 dates (approx) chopped
2 Tablespoons cocoa
coconut to roll them in (optional)

We used a whole cup of raw cashew bits from the supermarket and whizzed them up in the food processor.   I thought they'd go smooth like peanut butter but they were more like sand.  Then you add the other ingredients, blend it all together and roll into balls.  They're seriously delicious, dairy free and vegan too.   Good for a treat after dinner or to take to the beach at the weekend (that's where we went on weekend, after the zoo and swimming).
