dinosaur eggs

We made these dinosaur eggs and they're so cute.  Pretty much a meringue with a bit of chocolate milk powder sprinkled on top.  In case you want to make some for yourselves here's the recipe (I think we doubled it)...

1 large egg white
sprinkle of salt
1/2 cup white sugar (not caster sugar)
cold water
1/2 tsp choc milk drink powder or jelly crystals


Beat the egg white and salt till fluffy, gradually beat in sugar till stiff and white.

Use a teaspoon to scoop blobs of meringue onto a lined tray.

Dip your finger into the cold water and smooth the meringues into ovals, pat down any peaks.  

Sprinkle each mound with a little choc milk powder to add extra taste and speckles to the eggs.  Do it from high above as if you're too close it makes big ugly blobs.

Bake 12 minutes or until they puff up and form a hard outer shell.  Some will crack but they're supposed to.

I really feel I am home again now that I have read the blog and seen the boys - I like your new design. Pleased the boys are enjoying and doing well at swimming. They are lucky boys to have you as their mum, you re right we are lucky with what we have - there is no place like NZ. Will skype over the weekend L & C
