Delicious Pickled red onions from one of the Moosewood cookbooks.
Great in salads, sandwiches, on pizza... even the kids love them.
1 cup cider vinegar
1 cup water
2-3 Tbsp brown sugar
1 tsp salt
1 tsp peppercorns
4 red onions thinly sliced
- Mix the marinade ingredients together and stir till the sugar is dissolved (I used a big jar and shook it up).
- Place the sliced onions in a colander and pour a jug of boiling water over them so that they soften a little bit. Drain.
- Place the onions into the marinade and refrigerate for several hours before you use them. They'll last for ages in the fridge but if you're anything like us you'll be gobbling them up.

Thanks. Yum, my favourite. They won't last in my fridge! I'm also going to try red cabbage on it's own and finely sliced carrots,cauli,red pepper and onion mixed. xx
